I'm debating into starting, but, which versions of each game in the Eiyuu Densetsu series should I play and if there are any translations for the non-english versions.

Well, if you have a PC Engine/Turbo Duo you can play the first one in English. However, I don't think there have been translations for any of them yet.
There is a good walkthrough for ED VI, and that is one hell of a game. If I recommended any of them, it would be ED VI.
There is also an incomplete walkthrough for the PC ED III.
I'm playing ED III right now, and I love it!
With the second chapter to ED VI on the way, the total package of both games will be an unbeatable combination.
