The mature coconut has less water, it's also less sweet, but most of all it's just impractical to try and get into it for it's water. It's shell is just too hard, and it's more likely shatter once it does break.
But I found out that Goya sells coconut water canned. So the check the Goya selection in your grocery store. The larger the hispanic population in the area, the bigger the selection usually is. I'm enjoying a can of it right now.
Really? In America Goya is the name brand for Spanish food products in the grocery store.
Goya does mostly Caribbean, Mexican, and Central American stuff, from what I can gather. And given South America is none of these, nor a homogenous bloc in and of itself, it's not much a surprise they don't distribute in some, or many, areas.
